In line with age-old Belgian tradition, Mycelia has been brewing beer for over 15 years now: Shimake. It is often referred to as 'mushroom beer', as it is delicately flavored with shii-take extract. Nonetheless, those who identify the mushroom in a blind test are few and far behind!
About the beer:
Shimake is slightly tanned amber, has a full body to the palate, an ever-so-slight tinge of honey and a full aftertaste, which is when the shii-take colors the flavor. The shii-take is not distinctly present and will only be recognized as such by connoisseurs.
Originally developed as a joint project between Mycelia and the KAHO St-Lieven Brewer's University in Ghent as partners in a liquid state fermentation study, it got appreciated by a large number of beer lovers all over the world. While, like most Belgian beers, it is being brewed locally and in limited amounts, production is mostly meant for export. It comes in bottles of 33 cl and 75 cl.
